180 is low (still chewy) for my taste, but it doesn't hurt to try. If it's not as you like it, toss it back on. Remember it's going to keep cooking a while after you take it off of the smoker. I usually figure if we take it off of the smoker at 195, it'll go up to at least 200 while it rests, depending on the brisket.
