I guess when you say it like that, I agree that part is overcooked. I just meant on the whole, when the brisket it done. so yes, that little flap is overcooked.
I can take the temp throughout, but there's really nothing I can do about it unless you mean cut off the parts that are already done.... but I have to show my ignorance: what does shoe box mean in this context? i assume you mean trim it up to be more uniform, like a shoe box.
