Aubbs, what Hub said was great information, but 4 hours won't get it done. It will take closer to 8 hours to get it done. I would suggest smoking it for the 4 to 5 hours till you get a good color and bark, then double wrap in foil with a little sauce and stick her back in. Start checking the internal temp in a couple hours till you get around 205. This might take up to 3 hours to get to that temp. Good luck on your mission
