The sad news is that most Hawaiian pork is cooked out of the smoke and basically in a pressure cooker or crock pot. That can be a normal pressure cooker or crock pot or product wrapped in banana leaves and foil and done on a smoker. The hole in the ground with hot coals on the bottom is the real deal. I do Kalua Pork in a crock pot seasoned with nothing more than liquid smoke and coarse salt. My wife is from Hawaii and loves it.

Another thought is "Char Su" which is Chinese. You could a marinade and then smoke them lightly.
