I'm in with the banana leaves too. I've ben thinking of doing this for awhile. Keep simple, sea salt, fresh cracked pepper. Couple-three hours in the smoke then wrap with banana leaves and foil til done. Going to try the same thing using cornhusks too for a Mexican twist. I would make a sauce for the side if wanted so to taste how the leaves/husks actually imparted flavor. Sauce them up in the smoker and the leaf flavor would be covered up I think. That would be the most authentic for luau style pork. Butts would be fun to try like this too. I've been doing more basic S & P meat lately, back to the basics stuff.
