when i was a youngin in texas we ate hotgutsnot hot links sausgae that was full of jalopeno and stronger peppers. this is typical of the area between elgin,lockhart and taylor texas-known as the bbq triangle where bbq lovers get lost. this area was settled by german farmers who knew how to make hot guts or sausage with a kick. dont confuse this area with the bermuda triangle.
over the years the makers cut down on the heat but now there is a revival.
