Well I wouldn't cook the wings on the smoker. The best wings come off the grill and it only takes about 20 minutes to cook them until they are charred and not burnt.

The link below is to a recipe posted in 1998 that is really good.

"If your still going to smoke them I found this advice on the BBQ Forum Search Engine: They are done at 170* but will not pulled from the bone and fell apart.  I go by temp, time & juices running clear.  I bank the charcoal to one side in my kettle & cook indirect.  Lay out the wings, run the temp to 325* dome.  Flip at the 1/2 hour mark.1/2 hour later brown over coals till juices run clear. If your using sauce add at this time & cook another 1/2hour.In the last 1/2 hour I like to sauce then pile the wings. From start to finish cooking time is at least 2 hours if not 2 1/2."
