I'll echo what Ray said but add this. If you have a rotisserie, a rotisserie basket is your friend. Marinate, brine or rub to taste then into the basket and start it up. I do my best wings like this. And add a foil pack of hickory chips/chunks to add some smoke to the mix. Those clamp/tray baskets work well too so you can flip them all at once
