Here are my suggestions. I'm basing this on 100 people, that way you are even more assured not to run out (the worst that can happen).
Assuming you're using the half pan steam trays. If so, plan on bringing six fully loaded pans of pork (about 30 lbs. of cooked meat) Because you have other meats, that would be too much for one feeding, but you said you may need some leftovers for after the game.
Figure two bones per person average (some will have ribs and some won't). So, 100 x 2 / 10 good bones per rack is 20 racks. It doesn't seem like enough, but again it's not the only meat being served.
Bring four pans each of the cheesy corn and beans. Not the end of the world if you run out of those.
Two full wings per person after the game. I don't know how many lbs. that equates to.
You may have this figured out already, so if you do, sorry for sounding preachy, but my concern would be keeping things hot enough or reheating to a proper temperature after a three hour game. I don't know your equipment so I can't make any recommendations, but just keep food safety in mind. If you're trailering a large cooker it will make it easier to maintain and/or reheat. But familiarize yourself with safety guidelines if you're not already aware of them.
