At work we do a few different smoked itmes

Smoked tomato soup- We sweat garlic and onions in bacon fat, add smoked san marzano tomatoes and their liquid with thyme cook it down for an hour and puree in a vita prep season with salt and pepper

We smoke duck breasts and duck skin for some smoked duck fat and add to a pasta dish. Just add a pan under the skin and breasts and save the rendered fat

We smoke salmon bones for a smoked salmon and pinot noir broth for a salmon dish

Smoke carrots for a steak side dish
