i use skirt steak for chopped beef.I chop it up into small pieces.Its a tough cut of meat used to make carne asada very tasty and if you marinade it all the better. Its not low and slow-- rather on the grill. used here in Arizona extensively and the southwest. In Tomania they eat this as a steak with fried onions. Its made from the diaphragm of the cow-a very muscular muscle.
