I don't use a maze...don't even have a smoker where a maze would be appropriate, but if I did, I'm guessing that a modified U would have an advantage with regard to more consistent burn.

Another words...modify the 'U' so that the middle part is not one piece of steel...use a second smaller 'U' inside the larger, outer 'U' with the inside 'U' being about one inch wide...that way, when the upright retaining walls are heated, the one inch gap (where you are currently thinking of using a single piece wall) in the middle will not transfer red-hot metal heat across (or through) to the fuel on the directly resting on that (ungapped) seperator wall.
