Personally, I don't like ribs t fall off the bone as well as I like to "tug" the meat from the bone with my teeth.
As far as re-heating, I like the "Boil-in-the-bag" method. The ribs are vaccuum sealed and cooled. Right before serving time, I put the unopened bag in a pot of boiling water.
Works for me.
