i don't know that there is a right or wrong way to do things. opinions are like belly buttons. but what we do at our resturant is wrap in foil. you can do this during the cooking process with added flavor like you saw on pitmasters or at the end. either way you can cool the ribs, put in the cooler and then directly into an oven to reheat. i let the ribs cool, cut them individually, put them back in the wrap they came out of and into the cooler. it only takes about one hour to reheat the ribs at 266 degrees. they remain in the foil with the liquid flavor which means very moist. they remain in the foil in the warmer not the steam table. as to the fall off the bone deal, that just means you have cooked away the connective membrane holding the meat to the bone. most on here will tell you that is over cooked. i would agree. microwaves do bake potatos and nothing else.
