Lately I have been working on my ribs (just ok at best). I do a St Louis trim of spares from SAMS. Every time I trim these I have to wonder what I could be doing with the trimmings as there is a heck of a lot of meat in there if one was to cut out all the cartilage.
So, what do you do with the trimmings other than fling them at unwilling passers-by?
