I put the trimmings in a baggie and freeze them to use for beans in the winter.

Get the trimmings, put them in a pot of water with onion, celery and carrot, simmer until cooked through. Pull it out to cool off, add the beans to the pot. When the pork is cool, start pulling it off and throw it back in the pot. Season to taste. Bake a deal of cornbread and you're good to go!
