Here in Chi-town the BBQ joints are famous for their rib tips. Apply a heavy coating of rub to the tips. Cook as you would ribs. After 3 hours at 250, take off cooker. Cut or chop the pieces into 1 inch pieces or cubes. You can add a little more rub if you want and place cut up tips in a half pan and cover with BBQ sauce and tightly coin. I'd say at least and hour if not 90 minutes. Take out and serve over white bread. Don't ask me why, but that is how tips are sold up here... ;) enjoy.
