I believe you will find that if you are a contest cook that you can get the job done on an Ole Hickory, but will have difficulties when it comes to cooking on a similar sized SP. This assumes that you get an OH with what I call the competition features; damper in the door, gas ignition on/off, three position convection fan and of course a competition sized charcoal basket. I put these features on all the pits I buy. Not only for contests, but I think they give the commercial cook some nice backup features. Just my humble opinion.
