Pellet cookers can and do provide plenty of smoke. Fist use high quality 100% flavor wood pellets (e.g. hickory, oak, mesquite). Second, adapt recipes and approaches to lower cooker temperatures where pellets provide optimum blue smoke.
What they are hard to use for is over-smoking. Unless modified or horribly abused they will not provide acres of white creosote-belch smoke.
