I admit I haven't done much BBQing since my husband died earlier this year, but I have spent a lot of time chasing tarpon, marlin and bonefish.
Both worlds have collided nicely for me the past week. I've been fishing with a friend out on Lake Michigan. The first trip we got 20 fish, mostly steelhead (which are rainbow trout when in a river) plus some coho and king salmon. I got a 34" king salmon which was actually more fun to catch than my last white marlin.
Two days ago we went out again. We only got 8 fish but I landed a 31" steelhead!
I brined about 25 pounds of the fish overnight on Monday, rinsed it and dried it last night and then covered it with Dizzy Pig Raging River. My Cookshack is full and the big steelhead fillets each barely fit on 2 large Big Green Eggs! I'm about to glaze them with grade B maple syrup - the dark stuff. What fun!
Today I'm a happy girl....
