Hi, I usually only need to fill the ring once when doing butts and briskets. There are times when I add a little more towards the end if the weather is cool. I started with water, but have changed to sand. It is tricky to get the sand covered with tin foil. If it leaks, you have a solid chunk of sand, like a brick.

But hey, no matter what method, it is good bbq. Have fun with your new WSM. I have a mommy and daddy WSM. :)
