Just got done smoking 3 racks of baby backs on a ECB Charcoal smoker. They turned out fabulous after about 5 hours of cooking. My temps held steady at 250 + for 2 1/2 hours then leveled off at about 220. I've made some mods to the smoker (charcoal grate and vent holes in the charcoal pan and thermometer). My question is can I expect the heat to go down further after 5 hours of smoking if I want to cook a pork shoulder?? Any thoughts or suggestions.
