Maybe it's just me, but I can't count the number of new barbecuers I've known through the years who think all you have to do is find an old diner (or better yet - an old gas station), buy a smoker, get an RD card and print up some t-shirts, and in a few months Guy Fieri will have the Camaro parked out front. In fact, I know a few who've been cooking comps for years and they still think the only thing preventing them from becoming barbecue rock stars is a couple big grand championship checks. Whether the question includes "make a decent salary" or not, these people are quick to say they know it'd be hard work, but I don't think they have any idea...
