Dan, the best score we ever got in chicken, 180, the thighs were trimmed, well shall I say, less than perfect. They looked like grilled pieces of chicken thighs, not all symmetrical (sp?), but looked like pieces of chicken. But we have scored well with both types of trimming styles, including the above and your "pillow" style of trim that you mentioned.
So I guess that it is up to what table you get and what they are looking for. Congrats on the placing in your first comp, and good luck with any of your future comps.
