Man that sounds pretty good! Got into a craving of that earlier in the year using the smaller chubs. Think they are a pound or 2 from Walmart or Kroger. Seasoned and smoked then sliced and put on dinner rolls with a bit of mustard sauce and slaw. Did the deep frying thing, pan frying too. Tinkered with using pickles, slices of onion, toasting the buns, making little mock cuban sandwiches with it. I'm the only one here that eats the stuff.... May need to do more since you got me thinking again:)
