sorry I missed your follow-up question... but just in case you still want to know, I found little difference in actual meat weight retained when using open hotel pans if left un-covered. HOWEVER, if you re-incorporate the collected juices into the finished product you will see an increase in weight due to the "weight" of the juices themselves. Which is primarily what attributes to the increase in the percent retention when you wrap. It's not really the meat that stays, it's all the juices you collect instead of letting run into the bottom of your smoker.
