for years i used a propane smoker. i replace the cast iron box with a huge cast iron dutch oven that held about 3 times more chips. it worked wonderfully and my smoke ring was just perfect all the time.
i also have a webewr smokey mountain but never used it for long overnight smoking. last year i cut a 4" hole in the top of the smoky mountain, i cut a 4" diameter hole in the bottom of the propane smoker, installed furnace adapters in each hole and connected them with about 6 feet of furnace tube. i now do the normal thing with the propane smoker but at the same time i burn logs in the smoky mountain. it pumps 4 or 5 times more beautiful white smoke into the propane smoker. since the tube is ~6 feet long the smoke cools to have almost no affect on the temp of the propane smoker.
everything i smoke (brisket, ribs, shoulder, etc...) tastes so much better, has so much more smoke flavor and is jucier. BUT, my smoke ring is completely gone. part of me doesnt care becasue the meat is so much better, but the other part of me really wants the smoke ring.
ive research the ring and think temp does have something to do with it along with impurities in the smoke that probably get filtered out in the 6 feet of tube. is this right? should i just deal with it? thought??
