Recently, a BBQ friend who vends a LOT, told me he no longer smokes his chicken. Instead, he grills it because he got tired of trying to convince his public that pink-red smoked chicken really IS fully cooked. (We all know the customer is always right! HA! NOT!)
My other smoke ring issue has to do with smoke ring in ribs. For my palate, a big smoke ring in ribs make it taste more like ham than ribs. Not a good thing.
