Hi, Gang!

Quick question....I had the pleasure of eating at The Salt Lick in Austin....original location in Driftwood to be more exact....Their chicken there is truly outstanding....

They use a mop on their chicken...neither sweet nor sour....and I really like it...and I'm sure the recipe of this mop is TOP SECRET....but I'd like to find something close....

We have a new smoker...on a trailer...it's pretty large...and brand new...We've done chicken and it tastes great but the skin is a bit rubbery...and we'd like to cure that...and a mop seems the way to go....

Any information would be much appreciated!
