Why stop there? How about we let the organizers define the garnish rules at the cooks meeting, or define what the categories are, let them adjust the turn in window from 10 minutes to 5 or 20. Yes my tongue is planted firmly in my cheek. Personally I like to compete with the same rules at every competition I go to which includes the turn in order and times. There are enough other variables to deal with. Just my opinion.
