I smoke chicken at higher temperatures....315 to 325....I've tried lower and slower but skin comes out rubbery...but meat tastes great....

Trying to find a balance...more pliable skin...and tasty meat...

I recently dined at The Salt Lick in Driftwood / Texas...and whatever they're putting on their bird is righteous stuff and would love to know those ingredients...
