Here's what I do. Take your favorite season salts and/or kosher salts and lay them out on a sheet pan during a low smoke temp. I like to do it when I fire up the smoker. Remeber to keep the moisture low. Shake the pan every 15 to 30 minutes and smoke to your flavor. I do about an hour max, and go by taste and color of the salts. Perfect on a pellet cooker.
