This is sort of a preference. I like my loin medium rare. Others may find that it is too pink for them, but until you have had loin cooked to medium rare versus the dry over done pork, it is night and day difference.
For medium rare, shoot for final resting temp of 137-140. 145-150 final temp if you don't like the pink as much.
