I started cooking KCBS in 1991 and as I remember it things weren't very defined at that time. My first KCBS trophy was in the poultry category and I'd cooked a turkey. At that contest the pork category was bone-in loin because the organizer liked that. Like I said things were pretty flexible. Some old KC guys will tell you about pork tenderloin as a legal entry. I think the order was ribs, poultry, pork, and brisket. Sometime not too long after that chicken became the only option for poultry, butt became the only option for pork and the order was set as chicken, ribs, pork, brisket. This organization might have been part of the beginning of the CBJ program.
Juggy or Fast Eddy would be goood resources for this stuff. Eddy was a cook and a rep back then and Juggy has ben a memmber and cook for a very long time.
