Also, you may want to play around with the strength of the injection and try it at a little less than what is on the package. For the cost of this stuff relative to the cost of a brisket, I would not cook one without it. If you are not comfortable with a 60 CC syringe in your hands, you can get smaller ones at the vet or any farm supply store. I prefer 1 1/2 14 guage needles. If you jab one into a big piece of fat, it may be wrecked, so I keep several spares on hand.
