Depending on you smoker you may want to add a half pan of water to keep moisture up. When you open the smoker if you don't get a blast of moisture it will help. You can try cooking in a foil pan so s it cooks it sits in the juices. Then wrap at 165 or so.with just a bit of the juice and some butter. Resting is very important. Minimum of 1 hour.
