My wife and I are seniors. We sold our house last year and moved into a town house. I parted with my WSM and am smoking in a 18" Weber kettle, using the "ring of coals method", which works fine I should add. (I wish I could find the picture I have seen with the ring of coals in a kettle. It will burn for five hours.) It is a dry environment, with only a drip pan in the center of the ring, with the brisket on the cooking grate up above the pan. I'm watching Craig's list for a 22 1/2" kettle. Most recently, I've halved whole packers and cooked half at a time due to limited space, but I plan to try a flat the next time I cook.
