you can also try thses ..a little different twist on abts type appaetizers

Pork Tenderloin Wraps
1 large sweet onion
1-2 large tomatoes
1 green pepper, halved and seeded
1 red pepper, halved and seeded
1 pound bacon

1-2 pounds pork tenderloin cut into 1-1 1/2-inch slices for 6 to 8 pieces

Slice onion at 1/4- 1/2-inch intervals, keeping all rings intact. Slice tomato into 6-8 slices. Slice green and red peppers lengthwise.

Using a meat mallet, flatten slices of pork.Season prok with your favorite rub. On a cutting board or clean work space, place 2 pieces of bacon in an "X" and set meat on the bacon. Then pile the onion, tomato and 2 to 3 pepper strips. Bring bacon up around sides and secure with toothpicks. Repeat bundling process with remaining ingredients.

Cook on a low, slow grill with indirect method for 30 minutes or more until done. (Do not cook on high because bacon will catch fire.) Bundles may be made ahead and kept refrigerated until ready to cook.

Serves six to eight.
