Years ago I worked in a BBQ restaurant and one of my many duties was making the potato salad. We had a slicer/dicer that used wires instead of blades to cut boiled potatoes. Both cutters were on the same frame, with the slicing side elevated so you could put your hand underneath to catch the potato, and then turn it 90* and run it thru the dicing side. The entire device was metal, and fit on top of the large plastic tubs that we made the potato salad in. I have looked but have been unable to find a similar product available to buy. What do you restaurant owners use to slice/dice large quantities of potatoes for your potato salad?
