I have a question for the best of the best here. I am going to be getting married in the spring and expect over 250 guests, including children. I am catering this wedding myself and I have a couple of questions. I'm going to be smoking pork butt as well as whole chickens. Would it be bad taste to start smoking the butts and chickens in advance, then thaw them out the night before the wedding and putting them in the serving tins for the reception or would they lose the flavor by doing so? Also, how much would you think I'd need? There will also be hot dogs and burgers for the ones who don't eat pork as well as for the kids.
