I am not nearly the best of the best, not even the worst of the best, but I agree with Jeff. Don't do this.
Personally I think fully cooking pork and then freezing works great. I do this all the time.
If you are serving the chicken pulled it is ok. I don't like chicken that has been cooked and frozen for pieces. I just think it really looses a lot in texture.
