I did these recently. Keep in mind that my wife is allergic to shellfish but can still eat fish. Kinda tastes like crab. Take some large white mushrooms and remove the stems. I sharpened the edge of an old teaspoon, like a knife, for cleaning jalapenos and used it to make the cavity in the mushroom big enough to hold a little more stuffing. Now take about 1/2 of the mushroom stems, a clove of garlic, some green onions, some shreaded cheese, chives, bread crumbs and some left over Friday night fish from the local fish fry at "the club" and put in the food processer with a little Old Bay seasoning til blended. Stuff in mushroom caps and smoke til done. Now take the remaining mushroom stems and wrap in bacon and smoke next to the shrooms. That is, smoke the stems next to the shrooms. No wait. Not stems.
