Sorry for the brevity of my previous post. I rolll my stuffed meatloaf like a jelly roll. Use either parchment papeer or plastic wrap to help you roll it. I cook on a grill pan. The grease runs off and bark forms on all sides - like Cowboybup said. I have also cooked on a cooling rack or jerky screen. Anything to keep the meat from sticking to the cooker grate -- also helps you get meat in and out of cooker.
