In the past I have always been a strong advocate of using the Chef's Choice 130 machine to sharpen my knifes. Well, I have changed my mind. A few months ago my sons gave me a Bark River Knife and they cautioned me to not use that machine on it, because it had a convex edge. So one of my sons gave me a DLT Paddle Sharpening Kit.
I also watched the video's on the link below and after using this method to sharpen a few knifes I am a believer. I used the black coated side of the paddle to start transforming the edges to a convex edge and finished up on the green side. Now every now and then I give the knifes a few licks on the green side and they are really sharp. It only costs about $50.
