Good morning!

My wife and I have owned a 'regular' catering company for years and we're big BBQ enthusiasts...We've since been focusing on BBQ these days and bought a nice smoker on a trailer...and it works well....

We do mostly Ribs and BBQ pork butts but we're doing chicken too....We like our product alot but we feel like our ribs are smokey and its possible some folks may not like them quite as smokey as we do...Thus our question....We'd like to lighten up the smoke a bit and how do we do it?...

We start our off-set smoker with Kingsford charcoal in the firebox...and from there we're loading primarily Oak...We smoke around 275 to get good air movement...I'm looking to lighten the smoke load on the ribs a bit...Our chicken (under these same smoking conditions) comes out golden brown and delicious...
