Brent--Cathy and I cooked 20 10# pork butts yesterday and got about 125# of finished pulled pork. Also for our church in a couple of weeks. There are a lot more experts out there as it relates to catering and yields, hopefully some will chime in for you. But briskets have always usually given us 60 % yield from raw weight, so once you know the raw weight of those, make it up with the loins and butts.
