Brent, I've cooked for a lot of mixed groups like this and think you need to remember that about everyone will want to try some of everything offered. With brisket, burnt ends, butt and loin you are offering 4 meats so you might want to plan on a 2-3 ounce serving of each. Assuming its a family feed some won't take that much but the less thoughtful will more than make up for the light eaters.
I haven't had as good of yields as Leedawg. I usually get only 50% from raw butts, 65% from loins, 45-50% from packers for slicing and burnt ends.
I'm sure others have better ideas but this is what I've experienced.
