Pulled pork for crock pot

Alright yall, I have a crock pot challenge coming up at work. I am from Minnesota and I was recently donw in Kansas City for Tour de BBQ. Man oh man, I was spoiled from all of the BBQ joints and my favorite was hands down Bryants.

Well, I am a avid BBQ'er up in MN, I pretty much grill 6 days a week in the summer and try at least twice a week in the winter.

I want to cook a pork butt on my 22" weber (since I dont have a smoker. I have been reading online I can turn my weber grill into a smoker with soaked wood and briskets. I know that the best wood for KC BBQ is the Missouri White Oak (Am I right?) So I need some tips on the type of wood to get, what to soak it in and literally how to cook the butt.

Any advice is greatly appreciated!!!!
