To wet and windy to grill yesterday so a bison filet mignon got a simple salt and pepper rub heavy on the pepper then seared on a smoking hot pan on all sides. Turned down the heat and let it cook 4 minutes more to get the center body temp. Was perfectly cooked rare in the center with a great pepper crust.
