i bought a bag of whole tilapia at sams(5 fish for 12 bucks), and smoked them yesterday. i had them hanging on a fish stringer in the smoker(looked cool, but their little lips broke). anyway, i brined them overnight in saltwater and brown sugar, then smoked them with cherry wood at 200-225, until they hit an internal of around 140, around 2-3 hours. they turned out good, and at 2.50/fish, they make my 50.00/pound walleye sound like a luxury item :).
